| Biography | The Civic Rights Movement of the Sixties germinated a life of activism, women's rights, peace and a refocused view on a clean environment. Marilyn Megenity, chef and locavore, began her exploration of food, the community, culture and the politics surrounding food by opening the Mercury Café in 1975. The Mercury Café serves local, organic food to the residents of Denver as well as incorporates a handful of sustainable practices; it is powered by the wind and sun, it incorporates two living walls, it has a garden full of fresh herbs, all food is fed by kitchen coffee grounds and compost, it has energy efficient LED lights, and it has a grey water recycling system for its bathrooms. In addition, the café's car and co-op car runs on biodiesel fuel, and a majority of its employees, Marilyn included, walk or bike to work. A host of progressive groups call the Mercury Café their home. Both its patrons and practices have earned Marilyn and the Mercury Café several awards for their contributions to peace & justice, environmental design, arts, culture and fantastic food. |
